 We started dairy farming in the Wales in the beautiful Wye Valley in the 1970’s, the wet Welsh weather is perfect for growing lush long grass for the cows. Originally we farmed Friesian cows but moved to Jersey cows in the 1990’s. They are lovely cattle friendly, calm and well suited to our grass based system. All our cows have names and we breed all our cows on the farm so we can choose the ones with the best qualities for milking.  

Dairy has always been a challenging sector to be in and the owners Robert and Irene Brooke took the decision in 1990 to start making artisan ice cream, so as well as milking the cows they were now using the milk to produce and sell ice cream.  

We now have 100 pedigree Jersey cows on our 300 acre farm in Monmouthshire; they are milked twice a day and produce the creamiest milk, perfect for ice cream. The milking parlour is metres from the dairy meaning our milk can be turned into ice cream within 24 hours. Robert and Irene’s son and daughter are now involved in the business and the important job of ‘Chief Tasters’ goes to their two grandsons.

The ice cream manufacturing has a 5 star Food Hygiene rating and is inspected annually by SALSA to ensure we continue to work to the highest standards. Our farm is also accredited by Red tractor which is another way we demonstrate our high animal welfare practices.

Sustainability is really important to us so we installed solar panels in 2010 to provide some of our electricity requirements. Although Wales is not renowned for sunshine they even generate electricity on a cloudy day. All our packaging can be recycled and we are working with WRAP to minimise any wastage and look at ways of reusing any waste we do produce.

There is a lot of behind the scenes hard work that goes into running a farm and dairy business, so being recognised for all that we do on our farm is really special!
